Ability to set the document properties in Sharepoint

My customer is using MS Sharepoint to save and keep their documents version. To be able to find quickly their documents using the SP search function, they would like to be able to set a few default fields from the SP document properties.
Actually, we can only set the Check in comment on delivery. Our Business Users would like to be able to set as well the following field :
