when using a Webi document you can save and EXCEL format (not CSV) you have all kinds of options but only one option for using a tableau workbook.

For a Tableau workbook

tabs transfer from the tableau workbook and save into excel with the same tabs
Ask "All columns"?
Include all post processing functions that you provide when using a webi document
